Ginger Lemon Dressing

You know that amazing ginger dressing you get on the little salads at the Japanese restaurants? Well, this dressing is pretty damn close to that - and SO delicious!

Here's how I made it:

Ingredients

  • 1/2 cup minced onion
  • 1/2 cup peanut oil (if you have olive oil, you can use that too)
  • 1/2 cup rice vinegar
  • 3 tbsp fresh minced ginger (I use more - I LOVE spice)
  • 2 tbsp minced celery
  • 2 tbsp ketchup
  • 4 tsp soy sauce
  • 1 tsp sugar
  • 2 tsp lemon juice
  • 1/2 tsp minced garlic
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Directions

  1. Combine everything in a blender or food processor - voila!
  2. Put on salads, sandwiches or bowls!
  3. ENJOY!
