Stuffed Peppers
The perfect cool weather recipe - and when it can be made in under 30 minutes, it's pretty much a go-to weeknight meal!

INGREDIENTS:
- 1 package hot sausage (can be links or you can use ground turkey or ground beef)
- 1/2 white onion - chopped
- 4 cloves garlic - minced
- 4 tbsp EVOO
- 2 cups Israeli Cous Cous (I used the larger size)
- 8 oz tomato sauce
- Salt and Pepper to taste
- Crushed Red Pepper
- Oregano
- Red wine
- 6 oz shredded Mozzarella Cheese
- 3-4 red or green bell peppers
HOW TO
- Sautee garlic and onion in olive oil until transparent
- While garlic and onions are cooking- begin cooking cous cous (I undercook mine by 2-3 minutes to make sure it doesn't get mushy inside the peppers)
- Cut peppers in half and remove seeds inside - set in a pan with a dash of olive oil on the bottom so that they don't stick (you can cut long ways like I did- or cut the top off)
- Add in ground sausage (or turkey/beef) and sautée until cooked
- Add salt and pepper
- Once ingredients are brown and combined, add in a splash of red wine
- Continue stirring - add in oregano and crushed red pepper (to taste) until well combined
- Add in tomato sauce and continue stirring
- Add in cous cous and mix until well combined (2-3 mins and then transfer to peppers - you want to combine the ingredients but not continue to cook the cous cous)
- Stuff peppers with cous cous mixture and top with mozzarella cheese
- Cook at 350 for 20-30 mins covered, and then 5-7 minutes uncovered under broiler
