Stuffed Peppers

The perfect cool weather recipe - and when it can be made in under 30 minutes, it's pretty much a go-to weeknight meal! 



  • 1 package hot sausage (can be links or you can use ground turkey or ground beef)
  • 1/2 white onion - chopped
  • 4 cloves garlic - minced
  • 4 tbsp EVOO
  • 2 cups Israeli Cous Cous (I used the larger size)
  • 8 oz tomato sauce
  • Salt and Pepper to taste
  • Crushed Red Pepper
  • Oregano
  • Red wine
  • 6 oz shredded Mozzarella Cheese 
  • 3-4 red or green bell peppers 


  1. Sautee garlic and onion in olive oil until transparent
  2. While garlic and onions are cooking- begin cooking cous cous (I undercook mine by 2-3 minutes to make sure it doesn't get mushy inside the peppers) 
  3. Cut peppers in half and remove seeds inside - set in a pan with a dash of olive oil on the bottom so that they don't stick (you can cut long ways like I did- or cut the top off) 
  4. Add in ground sausage (or turkey/beef) and sautée until cooked
  5. Add salt and pepper 
  6. Once ingredients are brown and combined, add in a splash of red wine
  7. Continue stirring - add in oregano and crushed red pepper (to taste) until well combined
  8. Add in tomato sauce and continue stirring
  9. Add in cous cous and mix until well combined (2-3 mins and then transfer to peppers - you want to combine the ingredients but not continue to cook the cous cous)
  10. Stuff peppers with cous cous mixture and top with mozzarella cheese
  11. Cook at 350 for 20-30 mins covered, and then 5-7 minutes uncovered under broiler
